You can eat as much of this fresh, crunch salad as you like. It’s healthy, and full of texture and flavour. Be sure and adjust the quantity of the dressing to your taste.
You will need
¼ medium green cabbage, shredded
½ medium red cabbage, shredded
1 cucumber, sliced
1 medium onion, finely sliced
3 medium carrots shredded
2 cups of baby spinach
1 cup of cashew nuts, baked
1 large handful of parsley
1 large handful of mint
For the Asian Lime Honey Salad Dressing
2 tbsp lime juice
1 tsp clover honey
1 tsp sesame oil
1 tsp garlic paste or crushed raw garlic
1 tsp soy sauce
Pepper to taste
1. Combine all salad ingredients except the cashew nuts in a large bowl.
2. Combine all dressing ingredients together in a separate bowl.
3. At the last minute drizzle over the dressing and toss through.
4. Sprinkle cashew nuts on top and serve immediately
